This recipe is to DOLL for. It’s packed with veggies, nutrients, proteins so it’s actually GOOD for you!
Turkey Spinach Meatballs
Ingredients:
- 2 cups of Spinach
- ½ med onion, lightly chopped
- 3 cloves of garlic
- ½ red pepper, lightly chopped
- ½ cup carrots, chopped
- 2 lbs. of lean ground turkey
- 3 cups of almond meal/flour
- 2 large eggs
- 2 tablespoons olive oil
- ½ tsp. Kosher or Sea Salt & freshly ground pepper to taste
- 2 zucchinis
- 1 package of Wild Wonders tomatos
- 1 tablespoon olive oil
- Siracha
Tools:
- Food Processer
- Mixing Bowl
- Spiralizer
- Ice cream Scoop
Directions:
Preheat oven to 400 degrees.
In a food processor, finely chop the spinach, onion, and two cloves garlic. Set aside in a large bowl. Next, add the carrots and red pepper to the food processor, finely chop, and then add to bowl.
Combine your veggie mixture with the turkey, 2 cups almond meal, eggs, salt & pepper. Mix really well! Use an icescream scoop to make large, round meatballs and coat in almond flour. (Set aside one scoop.)
Bake meatballs for about 20-30 minutes or until cooked through.
While the meatballs are baking, cook tomatoes, onion and 1/4 cup of water on the stove. Add garlic, and salt and pepper. Bring to a boil and add a tablespoon of almond flour to thicken. Add the exta meatball mixture to make a ragu.
Spiralize the zucchini and sautee on the stove with one tablespoon olive oil.
Plate your dish. Garnish with Siracha. Pair with your favorite rose wine and serve!
